Treffen sich ein Serieninvestor, ein Schlachter und eine Unternehmerin. Sagt die Unternehmerin: „Lasst und Eier aus Bohnen machen.“ Und alle so: „Los gehts!” So lässt sich die Gründungsgeschichte von Perfeggt kurz zusammenfassen. Das Berliner Foodtech-Startup hat sich vorgenommen, eine vegane Alternative zum Hühnerei zu entwickeln. Wenn es nach dem Unternehmen geht, soll es sich dabei um das beste Ersatzprodukt handeln, das es derzeit auf dem Markt gibt.
In den Ring treten dafür: Tanja Bogumil als CEO, einst im Business Development von Mister Spex, dann Gründerin des Curated-Shopping Startups Kisura. Gary Lin, Seriengründer und Food-Investor (EVIG Group und Purple Orange), der sich auf die Fahne geschrieben hat, jedwedes Tier aus unserem Lebensmittelsystem zu verbannen. Und Bernd Becker, Co-Gründer und CPO des Startups, gelernter Schlachter und Lebensmitteltechnologe mit 25 Jahren Industrieerfahrung bei der Rügenwalder Mühle. Dort war er maßgeblich an der Entwicklung der vegetarischen und veganen Produkte des Wurstwarenproduzentens beteiligt.
Ei ist kompliziert
Eier aus pflanzlichen Proteinen – das klingt deutlich simpler, als es ist. Eier sind nämlich wahre Unicorns der Lebensmittelwelt. Mit ihren einzigartigen biochemischen Eigenschaften können Eier binden, schäumen, Gelee bilden. Einzelne Bestandteile können auch Trockenheit und Stabilität bringen. Eier seien für ihn die Königsklasse, sagt Bernd Becker. „Ich habe bewiesen, dass ich Blutwurst ohne Fleisch machen kann“, so der ehemalige Leiter Forschung und Entwicklung der Rügenwalder Mühle. „Und das war schon schwierig genug!”
Die Herausforderung danach sei gewesen, das Ei aus den vegetarischen Produkten seines alten Arbeitgebers zu bekommen, um sie vegan zu machen. Oft sei das zu Lasten des Geschmacks passiert. Ei mache oft einfach auch lecker. „Lecker bedeutet nicht nur Geschmack, dazu gehören auch Textur, Farbe und Geruch eines Produktes. Und wenn das am Ende nicht lecker ist, dann wird es auch nicht verkauft“, so Becker. Da könne es noch so nachhaltig oder gesund sein, das habe er in der Vergangenheit gelernt. „Keiner will beim Essen leiden.”

Als Bogumil ihn gefragt habe, ob er als Co-Gründer mit ihr pflanzliches Ei entwickeln wolle, habe er lange nachgedacht, wie er das anpacken wolle: „Es gibt ja kein Lehrbuch für pflanzliches Ei und es gibt auch keinen, den ich anrufen und fragen konnte. So neu, so unerschlossen ist das Thema nämlich noch. Und auch der Markt dafür: ein weites, offenes Feld von gigantischer Größe.
Ei ist ein Welterfolg
Eier werden kultur- und religionsübergreifend überall auf der Welt gegessen, sind das beliebteste tierische Protein. Allein in Deutschland liegt der Pro-Kopf-Verbrauch bei 239 Eiern jährlich, laut des Berichts zur Markt- und Versorgungslage Eier 2021 der Bundesanstalt für Landwirtschaft und Ernährung. Macht 19,9 Milliarden Eier, die hierzulande jedes Jahr gebraten, gekocht, pochiert oder zu Kuchen verarbeitet werden. Zugleich gibt es immer mehr Menschen, die sich von tierischen Proteinen abwenden. Fleisch war das erste. Etliche Erzeuger alternativer Proteine tummeln sich längst in diesem Bereich. Jetzt stehen gerade Milchprodukte und Käse im Fokus. Beispiel: Das Berliner Veganer-Käse-Startups Formo hat im September 42 Millionen Euro von einer ganze Menge namhafter Investoren bekommen.

An Ei hat sich bisher in Deutschland noch keiner im nennenswert großen Stil gewagt. Zumindest nicht an das Ei als Ganzes. Im Bereich Nahrungsergänzungsmittel und Nutrition für Sportler gibt es bereits einige Anbieter, die veganes Eiweiß – also das pure Protein – in unterschiedlichen Formen, von Pulver bis Shake, anbieten. Das freilich ist aber ein anderer Usecase als das, was Perfeggt vor hat. Sie wollen das Ei als Speise ersetzen. International ist die US-amerikanische Firma Eat Just mit ihrem Produkt Just Egg was das angeht führend. 2019 – also im Vergleich zu Fleisch- und Milchalternativen auch vergleichsweise spät – kam Just Egg in den USA auf den Markt, über den Europa-Launch wird lange schon spekuliert. In Deutschland soll die Wiesenhof-Mutter PHW den Vertrieb übernehmen.
Just Egg steht als gelbe Flüssigkeit in Plastikflaschen in den USA in den Regalen. Ähnlich wird Perfeggt anfangs wohl auch aussehen. Wenngleich die Gründer in unterschiedliche Richtungen denken, soll das erste Produkt Rührei oder Omelette sein – also: bevor es in die Pfanne kommt. „Was wir machen, sieht aus wie aufgeschlagenes, verquirltes Ei, erklärt Bogumil. In der Pfanne reagiere es dann auch wie aufgeschlagenes, verquirltes Ei.
Sieht aus wie echtes Ei, war aber kein Huhn dran beteiligt.

Ackerbohne plus X
Gemacht wird das pflanzenbasierte Ei unter anderem aus Ackerbohnen, einem unkomplizierten und nachhaltigen Gewächs, das sich lokal gut anbauen lässt. Hinzu kommen dann aber auch noch weitere pflanzliche Proteine, über die die Gründer sich nicht genau auslassen wollen. „Es ist ein hochkomplexes, pflanzliches Proteinsystem, fasst Bogumil zusammen.
Das Berliner Foodtech-Unternehmen hat seine erste Finanzierungsrunde über 2,5 Millionen Euro erfolgreich abgeschlossen. Zu den Geldgebern zählen führende internationale AgriFood-Investoren wie die EVIG Group, Stray Dog Capital, Good Seed Ventures, E²JDJ, Tet Ventures und Shio Capital, die in der Vergangenheit bereits Unternehmen wie Beyond Meat, Gorillas und Good Catch unterstützt haben. Darüber hinaus haben auch Industriegrößen Godo Röben, Frank Kühne, Fredrik Jung Abbou und Ludwig Cramer-Klett ihren Teil dazu gegeben.
Erst Gastro, dann LEH
Mit dem jetzt eingesammelten Kapital will das Unternehmen in den nächsten Monaten zusätzliche Leute in Berlin und an seinem Forschungs- und Entwicklungsstandort im Emsland einstellen, intensive Forschungs- und Entwicklungsarbeit betreiben sowie die Markteinführung ab 2022 in Deutschland, Österreich und der Schweiz vorbereiten. „Wir bauen Perfeggt als Konsumentenmarke auf in einem Bereich, in dem es bis dato keine Marken gibt, so Tanja Bogumil. Dafür werde man zunächst über die Gastronomie und den Foodservice-Bereich gehen – ab Anfang 2022. Im Verlauf des kommenden Jahres soll Perfeggt dann aber auch in den Lebensmitteleinzelhandel kommen.
